A purchase I made last week made its arrival on Tuesday...
Yay! Mizuna Wave Inspire 8's! You better believe I woke my butt up super earlier than usual to test these guys out the next day! I loved them. They took a bit of getting used to at first, but after about 5-10 minutes or so, I was good and almost didn't even feel like I was wearing shoes. Love it! Great purchase for sure and they actually ended up being on sale. Win!
Tuesday nights dinner. Chicken salad: chicken, stone ground mustard and a bit of mayo on Natures Own whole wheat sugar free bread. I won't ever buy that bread again just because the regular non-sugar free type isn't there. It isn't hearty at all like the regular whole wheat bread and just feels and tastes like something is missing. I don't know how to really describe it but all I know is it isn't great. Boo. But I will eat it until I finish the loaf because I don't like to be wasteful. :D

My full outfit. Totally needed a cover up as my dress was a little too form-fitting for broad daylight. ;) I had some thigh high socks on with some combat-ish boots. I loved the outfit and thought it was cute even if I may have looked like a street-walker without my big sweater cardigan-ish deal.
After leaving the gallery early to make it on time for trick or treaters, I immediately made myself some stovetop popcorn which I am just loving lately! So much better than the microwave variety.
These came down today...
Ay...until next year Halloween! Bring on Thanksgiving and Christmas! :D

Baby brussels sprouts with liquid aminos. Yum!
Super Easy Lentil Soup
Serves 4
1 cup lentils
2 cups water or chicken broth/veggie/beef, whichever (I used water)
1 can of Simple Truth Organic No Salt Added Diced Tomatoes
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1 teaspoon chicken bouillon
1/2 teaspoon each of onion powder and garlic powder
The How-To:
1: Pour cup of lentils and 2 cups of water into a large sauce pan, let it boil and then simmer until desired consistency. I like mine pretty tender so I had it cooking for about 20-30 minutes (I didn't really keep track :O)
2: Once lentils are ready, add in spices and diced tomatoes and/or any other veggies you might have; this was all I had on hand. Simmer for ~5-10 minutes.
3: Enjoy!
This is an incredibly basic lentil soup. However, it is very versatile and you have the freedom to add in whichever vegetables you have on hand and whichever other spices you prefer. I felt like I needed more salt but I really didn't want to add anymore since the 2 teaspoons of salt alone already added quite a bit of sodium to the soup. :/ So if you're watching your sodium intake, I would stick to one teaspoon of salt and find other ways to make the soup flavorful. Also, the chicken bouillon didn't help with the sodium count either. Ay.
But look at these cute dishes!
They are our Thanksgiving/Fall dishes and we bring them out every year. I decided to bring them out pretty early this year. I mean, I even put almost all of the Halloween decor away. Boo. Still makes me sad. Where did this year go?!?!
Time to finish watching Kenny Chesney perform one of my favorite songs, "Come Over," and then hit the hay.
